Baked Chili #3

 


2 lbs. ground beef. Anaheim/banana peppers. Creole tomatoes. 1 can diced tomato, 1 can Rotel tomato, 1/2 jar salsa. 1 onion, 2 cloves garlic. 2 cans black beans, drained. 2 tbl. chili powder, 2 tbl. cumin. Cover with foil and bake in 350 oven 1 hr. Good for chili tacos.

Baked Chili #2

 


With fresh Anaheim and banana peppers and Creole tomatoes. 1.5 lbs. ground beef, 1 onion, 1 stalk celery, 1 clove garlic, 1 can Rotel tomato, 1/2 jar salsa. 1 can black beans, red beans, pinto beans, drained. 2 tbl. chili powder, 2 tbl. cumin. 350 oven covered 1 hr. 

Mix of 10-12 Anaheim and banana peppers, sliced in half and cleaned, and layered in bottom of baking pan. 6 whole Creole tomatoes, chopped. Brown ground meat, remove, cook down onion, celery, garlic 3-5 min. Add fresh tomatoes and Rotel, cook 5 min. more. Add all seasonings, beans, meat, and cook five min. more. Pour on top of fresh peppers in baking pan, cover with foil, and cook 1 hr.

Three Bean Soup

 


Chili-flavored soup. 1 can black beans, red beans, pinto beans, drained. 1 can diced tomato, 1 can Rotel tomato. Chicken broth. 1 onion, 2 stalks celery, 2 cloves garlic. 1 tbl. chili powder, 1 tbl. cumin. 2 pork chops, cooked, chopped into cubes. (Optional). Normally meatless, but any leftover meat works well.

Less spicy version of this soup. Usually put in chipotle peppers in adobo sauce, which makes it hot.

Baked Chili, Peppers, Black Bean Casserole

 


Anaheim peppers. 1.5 lbs. ground beef, 2 cans diced tomato, 2 cans black beans, drained. 1/2 jar salsa. 1 onion, 2 cloves garlic. 1 tbl. chili powder, 1 tbl. cumin.

Making this up today. Cut peppers in half, clean, and layer in bottom of deep baking pan. Cover with ground beef, tomato, black bean mixture. Bake in 350 oven, covered, 1 hr.

Chili Tacos

 


A favorite of mine from my drinking days. The chili I make is very chunky, with three kinds of meat, and three kinds of beans, so it lends itself to chili tacos. Add a little cheese to each toasted shell, fill with chili, and eat over the sink b/c it is very messy.

Magnum, P.I. - Torah, Torah, Torah

 



Season five, ep. 21. Directed by Leo Penn. Aired March 28, 1985. I have John Hillerman on Ellery Queen now as I finish up my computer work for the day. He is such a hilarious dick in that show, you can't help but hate him. Moving on to season six of Magnum after this. Guest star is Nehemiah Persoff as the rabbi. This episode reminds me of The Frisco Kid, with Gene Wilder, who also gets his Torah stolen. And T.C. makes some bayou chili, holy crap.

Three Bean Chili Soup

 




No meat version. Using the new blogger is so pleasant. Made more bean soup yesterday for the freezer. Not exactly this recipe. I will do it slightly different depending on what tomatoes and beans I have and this time I didn't have any celery.

The frozen cubes are chipotle peppers in adobo sauce from last chili bean soup. Hot stuff.

 I drain and rinse the red and black beans and use the full pinto beans as a thickener.

One onion, two stalks celery, three cloves garlic. One tablespoon chili powder, one tablespoon cumin since it was a lot of beans, tomato, and vegetables.




Extra-Toasty Cheez-Its go well with the bean soup.

Spicy Chili Bean Soup


I didn't have enough meat to make chili, so I used extra beans, tomatoes and chicken broth to make a chili soup with a little bit of pork. My chili will use between 4-5 lbs. of meat. I used five cans of beans and three cans of tomato here. With 1.25 lbs of pork stew meat, cut into small cubes. One big onion, three cloves garlic. Three teaspoons cumin. Three heaping teaspoons chili powder. It made 22 cups.

Chili


This is another original recipe I needed to save. Three kinds of meat. Three kinds of beans. One beer.
