A unique gumbo. The chicken was cooked with Rotel tomato, and tomato in gumbo is just not done, but I dumped everything in to preserve the flavor. Andouille sausage. I can make a dark roux in 12 min. now, but 10 min. or less takes nerves of steel.

Splashed hot roux on the palm of my hand and burnt the shit out of it. That's why we call it Cajun napalm. Roasted a big whole chicken yesterday on the Chicken Rocket and then deboned it and made stock. Day two turn that into chicken and andouille gumbo. Full recipe at the link.

First make a roux. Gumbo recipe. Another needed saving from Kinja. This one will have lots of extra pics and the Chicken Rocket because I did it several times.
1 whole chicken
1 lb. smoked sausage
1 cup each - chopped onion, bell pepper, celery
3-4 cloves garlic
1/4 cup chopped parsley
1 beer (optional) - half in Chicken Rocket, half in gumbo
1 quart chicken stock (approx.)
Bay leaf, cayenne, pinch of thyme, salt, black pepper
