Red Beans 2026

 


2 lbs. dried beans. 2 onions, 3 stalks celery, 3 cloves garlic. Ham bone (hock). Smoked sausage. 2 boxes chicken broth. Thyme, cayenne, bay leaf, black pepper. Traditionally on Mondays. Double batch and freezes well.

This is an early look. Just starting. Will update. Takes a couple of hours.

Almost 2 hrs. Add sausage last hr. Remove bay leaf. Remove ham bone or hock, strip off meat, add back. Add hot sauce. Add water as needed. Stir heavily at end to make smooth.

The leftover holiday ham bone makes all the difference in good red or white beans. Big ham bone with lots of ham I cut off so a double batch of beans. 2 lbs. of red beans.

Red Beans with Easter Ham Bone

 


Big ham bone. I had two pounds of dried red kidney beans in the pantry and two big onions so this is a double batch. Lots of chopped onion. More pics as I go along. I am pre-boiling the beans now before starting the real cooking. The water turns black so this step is to remove impurities and it makes for a smoother finished dish.

Red Beans




I usually make a double batch these days with two pounds of beans. Freezes well.

1 - 1.5 lbs. dried red beans
1 lb. smoked sausage
1 ham bone or ham hock
1 - 2 quarts chicken stock
2 medium onions, 3 stalks celery, half a large bell pepper, 3-4 cloves garlic (chopped)
Bay leaf, thyme, cayenne, black pepper, salt, hot sauce
