Grasshopper Ice Cream Pie

 

Another experiment. Half container vanilla ice cream. 1.5 oz creme de menthe, 1.5 oz. creme de cacao. Stir together and pour into chocolate cookie pie crust. Freeze. Needed more ice cream. A little soft.

Baked Chili, Peppers, Black Bean Casserole

 

Anaheim peppers. 1.5 lbs. ground beef, 2 cans diced tomato, 2 cans black beans, drained. 1/2 jar salsa. 1 onion, 2 cloves garlic. 1 tbl. chili powder, 1 tbl. cumin.

Making this up today. Cut peppers in half, clean, and layer in bottom of deep baking pan. Cover with ground beef, tomato, black bean mixture. Bake in 350 oven, covered, 1 hr.

Chicken and Peppers 5/14

 

Banana peppers. 3 split breasts. 1 can diced tomato, 1 can Rotel tomato, 1 onion, 1 stalk celery, 1 clove garlic. Red wine. Brown breasts, remove, cook down everything in same pan. Pile on top of chicken, cook in 350 oven 40 min. Serve over rice. I also use the chicken itself in salads and sandwiches. Chicken Pepperoni from Seems Like Old Times (1980).

Cherry Bounce - Evan Williams

 

Latest batch of cherry bounce. Still have half a bottle of the Four Roses batch and I made a blueberry version. Next one I make may be a big one for family for the holidays. 

3 cups cherries, 3 cups whiskey (one fifth), 2/3 cup sugar, one cinnamon stick, two whole cloves. Let sit in a dark place for 3-4 months.

Red Beans 2026

 

2 lbs. dried beans. 2 onions, 3 stalks celery, 3 cloves garlic. Ham bone (hock). Smoked sausage. 2 boxes chicken broth. Thyme, cayenne, bay leaf, black pepper. Traditionally on Mondays. Double batch and freezes well.

Baked Potato with Bacon, Cheese, Green Onion 2026

 

One reason I grow green onions. Needed in several things I make often like three bean salad and shrimp pasta salad. This potato is a favorite. 

Mai Tai

 

1.5 oz. rum, 3/4 oz. orange liqueur, 3/4 oz. lime juice, 1/2 oz. orgeat, 1/2 oz. dark rum. Lime wheel garnish. Didn't have mint. Shake with ice and strain. Used Cointreau because I had an old bottle in a cabinet. Layer the dark rum on top.

Manhattan

 

2 oz. rye whiskey (or bourbon), 1 oz. sweet vermouth, 2 dashes Angostura bitters, cherry garnish. Add whiskey, vermouth, bitters in mixing glass with ice and stir. Strain into chilled glass and garnish with cherry.

Didn't have the right kind of glasses so I broke it in two, with two chilled glasses, and two cherries.

Mary Hill frozen dumplings. Roasted a whole chicken last night. Made chicken stock with the bones and onion/celery/whole peppercorns. Cook the dumplings in stock, add back the chicken. Thickens upon standing.
