3 breast filets. 1 can diced tomato, 1 can Rotel tomato. 1 can green chilis. 1 onion, 1 stalk celery, 2 cloves garlic. Red wine or beer.
Three cans Navy beans, drained. Two chicken thighs. One can diced tomato. One can Rotel tomato. One big onion. Two stalks celery. Two cloves garlic. Two boxes chicken broth. Thyme, bay leaf, cumin, cayenne. Simmer one to one and a half hours. Freezes well.
Still had two Anaheim peppers on the plants. Big breast filets. 1 can diced tomato, 1 can Rotel tomato. 1 onion, 2 cloves garlic. 1 little can green chilis. Red wine. 350 oven 40 min. I serve everything over rice.
Chicken pepperoni.
Roast a whole chicken first on the Chicken Rocket. Then make chicken stock. Cook the dumplings in the stock (Mary Hill frozen dumplings). Add the chicken back. Thickens upon sitting.
A unique gumbo. The chicken was cooked with Rotel tomato, and tomato in gumbo is just not done, but I dumped everything in to preserve the flavor. Andouille sausage. I can make a dark roux in 12 min. now, but 10 min. or less takes nerves of steel.

No whole chickens at the grocery so this version of chicken and peppers with big chicken breasts will sit in the fridge overnight to soak up flavor and be turned into chicken and sausage gumbo tomorrow. Sliced the chicken into thick pieces so the pepper juice can get in.
One can Rotel tomatoes, one little can green chilis, half an onion, one clove garlic, beer.

1 cup apricot preserves
1 cup sweet chili sauce
(I prefer Sauce for Chicken brand in background glass bottle but it was old so I got Panda brand which is not as hot.)
1/2 cup rum (?) (Can’t recall how much alcohol I used)
1/2 cup cider vinegar
1 tablespoon Creole mustard
1 teaspoon (approx.) worcestershire
1 teaspoon (approx.) hot sauce
Heat slowly to mix everything and simmer low 10-15 minutes to cook off some of the alcohol.
Transfer to jars and it will last nearly forever in the fridge.
Chicken Pepperoni. Three big split breasts after being deboned and chopped up so the peppers, tomatoes, onions, and red wine can seep in over time. I serve this over rice, but also good in salads and sandwiches, b/c the chicken has such good flavor, and makes a lot.

I've been cooking soups and chili lately so I didn't want the whole chicken bones to go to waste. Ziploc in the freezer with onion and celery tops. 5 whole peppercorns. Will freeze for later use.
