Made this up with what was on hand. 1/2 lb. ground beef, 1/2 cup rice, 1 can Rotel tomatoes, half an onion, 1 clove garlic. Topped with bread crumbs and parmesan. They were pretty with just the stuffing. Cut the peppers in half, cleaned them out, then stuffed them. 350 oven, 35 minutes.
