Making this up. 1lb. dried peas. 1 big onion, 2 stalks celery, 2 cloves garlic. 1 can diced tomato, 1 can Rotel tomato. Chicken broth. Seasoning meat (I am using 2 pork chops.) Thyme, bay leaf, cayenne.

I always boil dried beans or peas for 20 minutes first, then drain, and start over. Removes impurities and makes for a smoother finish. The pork chops I am cooking first, then simmer in the soup for a while, remove and reserve the meat and add bones back. Add the chopped pork back to soup in last 30 minutes of cooking.

Very large. 2lbs. ground beef. 1lb. beef stew meat. 1lb. pork stew meat. 1 can each black, red, pinto beans; drained and rinsed. 2 cans diced tomato. 1 can Rotel tomato. 1/2 can chipotle peppers. 2 onions, 2 stalks celery, 2 cloves garlic. 1 beer. 1 quart chicken stock. Full recipe at link.
All of my old beer can photos got deleted so now I have to do new ones. Luckily many were saved on Twitter so I just edited them back into the old blog posts.
For the freezer. 2lbs. ground beef. 1 package Italian sausage. 3 cans diced tomato, 3 cans tomato sauce, 1 can tomato paste. 2 onions, 3 cloves garlic, 2 stalks celery. Red wine. Anchovy paste. Thyme, oregano, basil, red pepper flakes, bay leaf. I keep the sausages whole, simmer them in the sauce, and freeze them one each in containers with the sauce.
Making now for the holidays. I'm using one bag frozen dark cherries but pitted fresh cherries are best. 2/3 cup sugar, 2 whole cloves, 1 cinnamon stick, 2-3 cups whiskey. Combine everything in a jar, shake, and store in a dark place at least 3 months. Shaking occasionally.
