Sandwich of the Day: The Veggie

- Bonus sandwich. Starving about to watch Beetlejuice Blu-ray. My mother gave me a bag of homegrown cucumber and lettuce, and an avocado. I made a version of this when I was a professional sandwich maker that was popular. People would bring in their own avocado since there was no guarantee I would have ripe ones on any given day. Easier to build on sub-type bread too. Avocado, purple onion, cucumber, lettuce (or sprouts), cheese, Creole mustard and mayo.

- This is my father’s specialty. A recipe so secret he won’t even tell me how he does it. Pronounced Coo-Be-Yahn. In Louisiana it is a thick fish stew. Spelled, pronounced, and cooked different elsewhere. Emeril’s picture here in the header adds the fish at the end, my father’s is smothered. The Creole and Cajun versions are a little different, which happens a lot. City and country.

Who is Johnny Marzetti?

- I have to cook for the bowl game tomorrow, and since I already wanted to make a batch of tomato sauce for the freezer, I am going to use some for a poor man’s lasagna version of Johnny Marzetti. Basically a casserole with pasta, ground meat, and tomato sauce. And cheese.
- I use pasta shells and layer that in a casserole dish with the meat sauce and cheese. A ricotta/parmesan/parsley mixture like you would use in a lasagna. And a little bit of mozzarella. Then you bake it at 350 for about 30 minutes.
- There are many different versions and ways to make this kind of casserole. Good for leftovers. I’ve done one with smoked chicken I needed to use.

The Jell-O Mold
Another old post from the Kinja Archive. And a mini-disaster using my grandmother's mold for the first time. The Jell-O stuck to the mold and wouldn't come out.
Rum and Apricot Glaze
For chicken wings on the BBQ pit. Found in the Kinja Archive:
1 cup apricot preserves
1 cup sweet chili sauce
(I prefer Sauce for Chicken brand in background glass bottle but it was old so I got Panda brand which is not as hot.)
1/2 cup rum (?) (Can’t recall how much alcohol I used)
1/2 cup cider vinegar
1 tablespoon Creole mustard
1 teaspoon (approx.) worcestershire
1 teaspoon (approx.) hot sauce
Heat slowly to mix everything and simmer low 10-15 minutes to cook off some of the alcohol.
Transfer to jars and it will last nearly forever in the fridge.
