Vodka Meat Sauce 2026

 

2lbs. ground beef. 1 pkg. Italian sausage. 2 onions, 3 stalks celery, 3 cloves garlic. 3 cans diced tomato, 3 cans tomato sauce, 1 can tomato paste. Red wine. Shot of vodka. Bay leaf, thyme, oregano, basil, red pepper flakes. Anchovy paste.

After cooking down the onion, celery, garlic, and adding the diced tomatoes; add half the red wine and a little vodka and simmer the tomatoes for 10 min. to cook out the extra water and alcohol.

Crawfish Etouffee 2026

 

1 pkg. crawfish tails with fat. 1 cup onion, celery, bell pepper. 3 cloves garlic. 2 cups chicken broth/stock. 1/4 cup parsley. Salt, pepper, cayenne. Roux with 1/2 cup butter, 1/3 cup flour. Once crawfish added, simmer 20 minutes.

Add parsley last ten minutes of cooking. I added too much dried parsley this time but it won't hurt anything.
